The Ube Cotton Cake consists of three soft, light, and fluffy Ube cotton sponges and two layers of homemade Ube Halaya Jam filling. The jam is made from using Ube yam, steamed and cooked with coconut milk, evaporated milk, condensed milk, brown sugar and Ube extract for colouring.
The cake is covered with Ube fresh whipped cream and garnished with fresh seasonal fruit.
What is a Cotton sponge cake? Cotton sponge cake is commonly sold in Asian cake shops, it has less sugar and dairy (no butter) and is much lighter than other regular sponge cakes. The cake is baked in a water bath for one and a half hour to produce a much more soft and moist sponge.
