The Rockmelon (Cantaloupe) Cotton Cake consists of two soft, light, and fluffy rockmelon‑flavoured cotton sponges, filled with a layer of fresh rockmelon mixed into rockmelon‑flavoured Chantilly cream. It is covered with rockmelon‑flavoured Chantilly cream (sweetened whipped cream) and topped with rockmelon fruit balls.

What is Cotton sponge cake? Cotton sponge cake is commonly sold in Asian cake shops, it has less sugar and dairy (no butter) and is much lighter than other regular sponge cakes. The cake is baked in a water bath for one and a half hour to produce a much more soft and moist sponge.
