Chocolate Drip Cotton Cake

The chocolate drip cotton cake consists of two layers of soft, light, and fluffy chocolate cotton sponges and a layer of strawberries and cream filling; covered with chocolate ganache, drizzled with chocolate ganache and decorated with chocolates and fresh strawberries.

What is a Cotton sponge cake?

Cotton sponge cake is commonly sold in Asian cake shops, it has less sugar and dairy (no butter) and is much lighter than other regular sponge cakes. The cake is baked in a water bath for one and a half hour to produce a much more soft and moist sponge.
