Mango & Cream Cotton Cake

The mango & cream cotton cake consists of three layers of soft, light and fluffy cotton sponges and two layers of fresh mango mixed with cream filling; covered with Chantilly cream (sweeten whipped cream); decorated with mango floral and topped with mango and two other seasonal fresh fruit.

Only available during mango season (October to mid-February).
What is a Cotton sponge cake? Cotton sponge cake is commonly sold in Asian cake shops, it has less sugar and dairy (no butter) and is much lighter than other regular sponge cakes. The cake is baked in a water bath for one and a half hour to produce a much more soft and moist sponge.
