Tropical Coconut Macaroon Cake

Macaroon layers consisting of shredded and desiccated coconut and almond meal, whipped Mascarpone cream cheese and cream, a middle layer of puree mango jelly (agar agar), topped with strawberries and slightly sweetened passionfruit. A refreshing kind of cake that is sweet and tangy.

It is gluten-free and vegetarian friendly.
