What is a Cotton sponge cake?
Cotton sponge cake is commonly sold in Asian cake shops, it has less sugar and dairy (no butter) and is much lighter than other regular sponge cakes. The cake is baked in a water bath for one and a half hour to produce a much more soft and moist sponge.Cotton sponge is available in plain, vanilla, or chocolate.
